SWEET POTATO AND KALE PIZZA

The world would be such an ugly place without sweet potatoes. They taste like candy and are kind to your body simultaneously. Kale adds a great balance to the sweetness of the potatoes. Play around with other toppings aside from the ones this recipe suggests - carmelized onions? Cilantro grilled chicken breast? Gruyere cheese? The world is your oyster (or, rather, your pie).

VEGAN CAULIFLOWER PIZZA BITES

 

Going along with my theme of unleashing your inner child this week, I thought I'd revive some of the munchies you used to consume when you were little. Except these aren't processed, artifical frozen foods loaded with sodium and saturated fat - these little guys actually pack a heck of a lot of nutrition into one little niblet. Not vegan? Modify and add some cheese or lean meat.
